    If you're looking for a fresh and zesty salad, prepare to embark on a culinary adventure with the vibrant flavours of Thailand with my vegan Thai Green Papaya Salad! This traditional dish, also known as "Som Tum," combines the perfect balance of sweet, sour, and spicy elements, creating a refreshing and aromatic salad that will transport your taste buds to the bustling streets of Southeast Asia. Seriously, worth the try! Plus, it pairs perfectly with fish or curry.

    Ingredients

    • 1 green papaya

    • 1 cup cherry tomatoes

    • 10 green beans

    • 2 spring onions

    • 1/4 cup roasted peanuts

    • Dressing
    • 2-3 limes, juiced

    • 2 tbsp coconut sugar

    • 1.5 tbsp vegan fish sauce

    • 3 garlic cloves, minced

    • 1 bird's eye chilli

    • 1 tbsp water

    • salt, to taste

    • Garnishes
    • Thai basil

    • Fried shallots

    • Fresh sliced chilli

    Directions

    • Shred green papaya and place into the bowl.

    • Place tomatoes and green beans into a mortar and pestle and lightly bruise to release some of their juices. Place into bowl with green papaya. Slice spring onions and add to bowl with other ingredients.

    • Next, make the dressing by putting all dressing ingredients into a jar and shake up to combine. 

    • Add roasted peanuts and dressing to salad bowl and mix well. 

    • Add optional garnishes for extra flavour and serve. Enjoy!

    Notes

    • If you can't find thai basil, you can omit here or replace with standard basil or mint for extra flavour in this recipe
