I have a confession…😬

I don’t like zucchini…yep, never have. But I do grow zucchinis at home for their flowers and I happen to let a couple grow and so here we are! Honestly though, the flavours in my gluten-free and fully plant-based fritters are out of this world. They are so delicious and you can’t even tell that you’re eating a zucchini 🤫🫢

I made my plant-based Spanakopita but this time with a spin (or spiral, one might say) 🌀🇬🇷🌱

I love this dish so much and honestly it’s such a great dairy replacement for anyone whose plant-based or doing a dairy-free diet! And I say that having made both versions many times. But don’t take my word for it - try it yourself 🥰

When I tell you that you NEED this in your life I am not kidding. Seriously. Get to the store and grab some cashews and your ‘starter’ and you’re good to go.

It’s creamy, tangy, gut-friendly and spreadable - everything you would want in a ‘cream cheese’ replacement 🤤
