High-Protein + Low-Carb Peanut Tofu Lettuce Cups 🥬🥜

Ingredients:

Butter lettuce leaves
Mung bean noodles
Purple cabbage
Half block of high-protein firm tofu
1/2 carrot, shredded
1 tbsp tamari sauce
1 tbsp sesame oil
1 tbsp ginger, minced
2 cloves of garlic
Coriander, to garnish
Crushed peanuts, to garnish
Chilli, to garnish

Peanut Sauce:

2 tbsp hoisin sauce
1/4 cup peanut butter
1 tsp tamari sauce
1 tsp maple syrup

How to:

1️⃣ Mince garlic and ginger. Next slide or grate carrot and cabbage. Set aside.

2️⃣ Open firm tofu and mop up excess moisture with a paper towel. Crumble up.

3️⃣ Heat your Crumble Deep Fry Pan on medium heat with sesame oil. Add into tofu along with tamari, garlic and ginger. Stir fry until moisture evaporates and crumbles start to appear more crispy.

4️⃣ Prepare your lettuce cups. Pull off the best leaves, wash and dry.

5️⃣ Add in vermicelli noodles, carrot, cabbage, tofu crumble, crushed nuts and peanut sauce. You can even add chilli and coriander here too.

Dragonfruit Sorbet made in the Ninja Creami 🍦🤌

I’ve been growing dragon fruits for around 10 years and I’m not lying when I say it’s been my BIGGEST harvest yet 🙈 like almost too many haha! BUT that’s where the idea for the recipe came from, as well as trips to Cairns where I without fail will order myself this particular dragonfruit sorbet 🤤

You’ll need:
1 large dragonfruit
1 tbsp of stevia or monk fruit sugar
1/2 cup coconut milk or cream
1/4 xantham gum (optional, but helps bind)

Cranberry Matcha Spritzer 🍵✨

Meet your new summer obsession: Cranberry Matcha Spritzer 🌞 A refreshing, antioxidant-packed twist on your usual drink, featuring @oceansprayanz Pure Cranberry Juice! 🍒💦 Who knew matcha and cranberry could be this good together?!

💚 Bold. Tart. Bubbly. ☀️ Perfect for summer sipping!

How to make:

1️⃣ Whisk 1 tsp matcha powder with a splash of warm water until smooth.
2️⃣ Add 1/4 cup Ocean Spray Pure Cranberry Juice into the bottom of the glass over ice. See Tips.
3️⃣ Top 3/4 of the way up with sparkling or soda water then pour over the whisked matcha.
4️⃣ Sweeten with maple syrup or honey, if desired.
5️⃣ Garnish with lime slices and mint.

Tips 📝

👉 If you’d like to create a thicker cranberry syrup, you can pour 1/2 cup of Ocean Spray Pure Cranberry Juice into a saucepan and simmer the juice over low heat until it reduces and thickens naturally.

👉 If you’re a sweet tooth + want a thicker glaze-like consistency, you can add 1 tbsp or so of sugar to your cranberry juice in a saucepan to simmer and thicken over low heat. You can also add corn flour and whisk this in to further thicken to get more of a jammy consistency.

Raspberry Ripe Bars 🍫🤤🙈

If you love a classic cherry ripe chocolate bar, you need to try these homemade Raspberry Ripe Chocolate Bars - they’re rich, fruity, and coated in silky dark chocolate. Made with @naturalrawc Organic Virgin Coconut Oil for that perfect melt-in-your-mouth texture, they’re next-level good (and PERFECT for Valentine’s Day…hint hint) 🌹

For the Raspberry Filling:
2 cups frozen raspberries (thawed)
2 tbsp maple syrup
2 tbsp @naturalrawc Organic Virgin Coconut Oil (melted)
1.5 cups desiccated coconut
1/2 tsp vanilla extract
Pinch of salt

For the Chocolate Coating:
1 cup dark vegan chocolate (chopped)
1 tbsp @naturalrawc Organic Virgin Coconut Oil

How to:
1️⃣ Prepare the Raspberry Filling: Mash or blend the thawed raspberries with a fork until smooth. Stir in maple syrup, melted coconut oil, desiccated coconut, vanilla extract, and salt. Mix until well combined. Transfer the mixture to a lined tray or silicone mould, pressing it down evenly. Place in the freezer for 30 minutes, or until firm.

2️⃣ Melt the Chocolate: In a heatproof bowl, combine dark chocolate and coconut oil. Melt over a double boiler (or microwave in 30-second intervals, stirring in between) until smooth.

3️⃣ Coat the Bars: Once the raspberry filling is firm, cut it into bars or bite-sized squares. Dip each bar into the melted chocolate, ensuring it’s fully coated. Place on a lined tray. Return to the freezer for 10-15 minutes to set. You can also add freeze-dried strawberry pieces or gold flakes to the top of the bars here too!

Easy, healthy 2-Ingredient Ninja Creami recipe that has no dairy and no refined-sugar. Trust me, it is totally addictive 🤤

Fakeaway Fridays: Greek Style Loaded Fries 🍟🇬🇷

Welcome to Fakeaway Fridays! 🎉 Every week, I’m going to be bringing you easy, budget-friendly, plant-based versions of some of your favourite takeaway meals! 🥗

Lazy Girl Hacks ↓

✅ Frozen chips - such a time saver and affordable!
✅ I made my own seitan here for this BUT you can pick up your favourite vegan mince or shredded meat from the store (even better if it comes pre-seasoned)
✅ Don’t want to make your own tzatziki? Easy, just grab one from the supermarket to save time and $$ on individual items (I happen to have most of the ingredients at home already i.e. coconut yoghurt, herbs in the garden, lemons etc)
✅ Use a mandolin slicer or chopper to save time chopping your veggies

Bonus: this meal worked out to be under $10 for two portions!
