Ready in under 30 minutes, packed with plant protein and loads of fibre! 🌱

Time-Saving Hacks:

🌯 Use canned refried beans – No mashing or seasoning needed, just heat and go!
🌯 Grab a veggie chopper – Dice onions, tomatoes, and anything else in seconds.
🌯 Pre-chopped ingredients – Buy pre-shredded cos lettuce or pre-diced onions to skip the prep.
🌯 Pre-made chipotle sauce – Saves time mixing - just drizzle and enjoy!
🌯 Warm tortillas in a stack – Heat multiple at once in the microwave or oven to save time.

I made the viral hot honey beef + cottage cheese bowl but 100% plant-based 🌱↓ You guys, this recipe is so good! I wasn’t sure what to expect but OMG one word: Delish! I made the cottage cheese myself - and yes, all vegan and high in protein! Craving a burger but want to keep it fresh? Enter: Burger Bowls — all the juicy, flavour-packed goodness of a burger, minus the bun and with extra crunchy veggies. It’s got all the toppings, all the sauce, and all the satisfaction… without the post-takeout slump!

Time-Saving Hacks:

⏱️ Don’t have time to make my bean burgers? Pick up your favourite pre-made ones from the supermarket
⏱️ Make the sauce ahead – Burger sauce only gets better after sitting for a bit, so whip it up the day before and keep it in the fridge
⏱️ Don’t want to make your own fries? If your burger bowl needs a little crunch, toss some frozen fries or sweet potato wedges in the air fryer for a quick side.
⏱️ Prep your veggies in advance – Chop your lettuce, onions, and cherry tomatoes and store them in airtight containers.

A classic Thai rice noodle dish that just hits the spot, every single time…and today, we’re making it - but healthier and loaded with plants 🌱

Time-saving hacks:

⏰ Swap chopping up fresh veggies for frozen ones or pre-chopped veggies (more affordable too!)
⏰ Using fresh rice noodles save time on cooking compared to the dried versions
⏰ Mix sauce ahead of time and pop in the fridge so it’s ready to use
⏰ Cook it all in just ONE pan - less washing up which we love

High-Protein + Low-Carb Peanut Tofu Lettuce Cups 🥬🥜

Ingredients:

Butter lettuce leaves
Mung bean noodles
Purple cabbage
Half block of high-protein firm tofu
1/2 carrot, shredded
1 tbsp tamari sauce
1 tbsp sesame oil
1 tbsp ginger, minced
2 cloves of garlic
Coriander, to garnish
Crushed peanuts, to garnish
Chilli, to garnish

Peanut Sauce:

2 tbsp hoisin sauce
1/4 cup peanut butter
1 tsp tamari sauce
1 tsp maple syrup

How to:

1️⃣ Mince garlic and ginger. Next slide or grate carrot and cabbage. Set aside.

2️⃣ Open firm tofu and mop up excess moisture with a paper towel. Crumble up.

3️⃣ Heat your Crumble Deep Fry Pan on medium heat with sesame oil. Add into tofu along with tamari, garlic and ginger. Stir fry until moisture evaporates and crumbles start to appear more crispy.

4️⃣ Prepare your lettuce cups. Pull off the best leaves, wash and dry.

5️⃣ Add in vermicelli noodles, carrot, cabbage, tofu crumble, crushed nuts and peanut sauce. You can even add chilli and coriander here too.
