  • Fillings of your choice (e.g., vegetables, herbs, protein options)
  • Sushi rice
  • Dipping sauce of your choice

Instructions:

  1. Prepare the Fillings:
    • Wash and prepare your desired vegetables, such as lettuce, cucumber, carrots, bell peppers, bean sprouts, and herbs like mint, basil, and cilantro. Slice them into thin strips or julienne.

Ingredients

  • 8 rice paper wrappers

  • 1 cucumber

  • 1 carrot

  • 1 red bell pepper

  • 1 tbsp sesame seeds

  • 1 cup sushi rice

  • 1 avocado

  • Marinated Tofu
  • 1/2 block firm tofu

  • 1 tsp rice wine vinegar

  • 2 tsp coconut sugar

  • 1/2 tbsp corn flour

  • 1 tsp dark soy sauce

  • 2 tsp soy sauce or tamari

Directions

  • Wash and prepare your desired vegetables including cucumber, carrots, bell peppers and herbs like mint, basil, and cilantro. Slice them into thin strips or julienne.
  • Cook sushi rice, according to packet instructions and set aside. In the meantime, prepare the tofu marinade by mixing all ingredients together.
  • Fry off tofu with olive oil, covering in the marinade and cooking for about 5 minutes.
  • Fill a large bowl or shallow dish with warm water. Dip one rice paper wrapper into the water and rotate it gently for no more than 5 seconds until it becomes soft and pliable. Be careful not to soak it for too long, as it can become too sticky and will tear. Remove the softened rice paper wrapper from the water and place it on a clean, flat surface, such as a cutting board or a damp kitchen towel.
  • Arrange your fillings in the centre of the rice paper wrapper, leaving some space at the edges. Layer the ingredients to create a colourful and appealing filling. You can start with a base layer of sushi rice then lettuce or herbs, followed by your choice of vegetables and protein options.

  • Serve with your favourite dipping sauce and eat straight away while crispy.

Notes

  • Be careful not to wet your rice paper wrappers too much as these will tear and your filling will fall out. No more than 5 seconds in the water bath.
