Zesty, sweet and vibrant – that is exactly what you’ll get with my Mango Salad! Easy to throw together and a real show stopper, making it perfect as a side or a main dish, and great for the summer months.

Ingredients

  • 1 large Mango

  • 1 Cucumber

  • 1/2 Spanish Onion

  • 1 cup Cherry Tomatoes

  • 1 Avocado

  • Fresh Mint Leaves

  • Lime Honey Dressing
  • 1 Lime, Juiced

  • 1 tbsp Extra Virgin Olive Oil

  • 1 tbsp Raw Honey

  • Celtic Salt

Directions

  • Start by chopping up your salad ingredients and place these into one serving bowl.
  • To make the dressing, juice 1 lime and whisk together with the other ingredients.
  • Pour over dressing and add fresh mint leaves when ready to serve.
  • Enjoy!

Notes

  • If you are not eating this straight away, avoid pouring over dressing as tomatoes and mangoes are already juicy.
