These deliciously sweet and savoury Honey and Thyme Roasted Carrots makes the perfect side dish for any Sunday roast! It’s simple, easy and fully plant-based.

Ingredients

  • 15 Dutch Carrots

  • 1 tbsp Raw Honey

  • 1 tbsp Extra Virgin Olive Oil

  • 1 tsp Celtic Sea Salt

  • 1 tbsp Fresh Thyme

Directions

  • Start by washing and scrubbing (or peeling) the carrots. Cut the green ends off.
  • Pre-heat the oven to 200 degrees celsius. Line a tray with baking paper and place the carrots in.
  • Whisk together the honey and olive oil. You may need to microwave the honey for 10 seconds or so to melt it. Add in salt. Pour over the carrots. Sprinkle half the fresh thyme on the carrots.
  • Bake in the oven for 25 minutes or until the carrots are tender and caramelised. In the last minute or two, add the remaining thyme. Serve wiyth any main dish.
