Introducing my delectable and guilt-free creation: Healthy Vegan Snickers Bars! But what sets them apart is the fact that they are entirely plant-based and free from any refined sugars or artificial additives. What you’ll need to make this recipe

So, I know you’re probably thinking as a mostly raw vegan treat that you’ll need at least 20 + ingredients and at least 5 different machines but you really don’t with this one. While there is some effort involved I’ve tried to make this one as easy as possible! Because I really hate all the washing up haha!

So, for this one you will absolutely need a good quality blender because we’re working with medjool dates and nuts which are both dense and sticky. Something like a Vitamix or Thermomix will do the job here. A stick blender not so much.

You’ll also need a rectangle or square baking tin that has high enough walls – about the height you would like your snickers bars to be. Mine was about 4-5cm.

Lastly, you’ll also need a double boiler or microwave dish you can melt your chocolate mixture in.

Ingredients

  • Outler Layer
  • 400 g vegan dark chocolate

  • 2 tbsp MCT oil

  • Base
  • 1.5 cups unsalted roasted peanuts

  • 6 medjool dates

  • 1/3 cup coconut or almond flour

  • Caramel layer
  • pinch salt

  • 0.5 cup almond milk

  • 4 tbsp natural peanut butter

  • handful peanuts

  • 10 medjool dates

Directions

  • Blend all of your base ingredients up in a high-powered blender or food processor. Then press into a lightly sprayed baking pan. Place into freezer while you proceed with your next steps.
  • Blend up caramel layer by placing all ingredients into a high-powered blender or food processor. To make more creamy simply add a dash of almond milk or water. Otherwise you may like to keep thicker. Once done spread out layer into baking pan you have placed into the freezer. Again, place back into the freezer while you make your chocolate layer.
  • To make the chocolate layer, simply melt in the microwave or double boiler until almost all chocolate is melted. Stir through and set aside. While this is finishing up melting, you’ll want to remove your mixture from the freezer and quickly cut into bar sizes.
  • Next, dip each bar into the chocolate and set on a tray. Once all bars are covered place into freezer to set.

Notes

  • If you can’t find medjool dates than use dried dates and soak in boiling water for 1-2 hours before blending mixture
