Absolutely! Swap the pecans and almond butter for sunflower seed meal and tahini or a similar seed butter. They’ll still be just as delicious and allergy-friendly! However, please note the flavours will slightly differ to the flavours of almonds and pecans in this recipe.

What can I coat them with?

Get creative! Some ideas:

  • Coconut flakes for a snowy effect
  • Crushed nuts for a crunchy twist
  • Cacao powder for a rich finish
  • Even festive sprinkles for a holiday vibe!

My mixture isn’t sticking together. What should I do?

If your mixture is too dry, add a little plant-based milk or almond butter, 1 teaspoon at a time, until it sticks together easily. You can even try a drizzle of coconut oil too!

Can I substitute Medjool dates for other dates?

Yes, you can substitute Medjool dates with other types of dates, like Deglet Noor or other soft varieties! Just keep these tips in mind:

  1. Softness Matters: Medjool dates are naturally soft and sticky, making them perfect for binding bliss balls. If your substitute dates are drier, soak them in warm water for 5-10 minutes to soften them up before using.
  2. Sweetness Levels: Medjool dates are sweeter than most other dates, so if you use a less sweet variety, you might want to add a teaspoon of maple syrup or a bit of molasses for balance.
  3. Quantity: Medjool dates are larger than most other dates. For every 1 Medjool date, you’ll likely need 1.5-2 smaller dates.

These gingerbread bliss balls are the ultimate no-bake holiday treat – soft, spiced, and naturally sweetened with dates. They’re vegan, refined sugar-free, and perfect for adding a little festive magic to your snack game!

Ingredients

  • 1 cup Medjool Dates, pitted

  • 1 cup Pecans

  • 1 tbsp Almond Butter

  • 1/3 cup Shredded Coconut

  • 1/8 tsp Pink Himalayan Salt

  • 1 tsp Gingerbread Spice Mix (Ginger, Cinnamon, Nutmeg and Cloves)

  • 1 tbsp Honey or Maple Syrup

  • Coatings
  • Shredded Coconut

  • Cocoa Powder

  • Crushed Nuts

Directions

  • If your dates are dry, soak them in warm water for 5-10 minutes, then drain well. You will also need to pit your dates here too.
  • Place all ingredients into a food processor and blend until the mixture forms a sticky dough. If the mixture is too dry, add 1-2 tablespoons of plant-based milk and blend again.
  • Scoop out small portions (about 1 tablespoon each) and roll them into bite-sized balls with your hands.
  • Roll the bliss balls in coconut flakes, crushed nuts, or cacao powder for extra flair if you like here.
  • Place the bliss balls in the fridge for at least 30 minutes to firm up. Store in an airtight container in the fridge for up to 1 week or freeze for up to 1 month.
