The recipe involves marinating salmon fillets in a mixture of garlic, lemon juice, and herbs such as oregano and thyme. The salmon then gets seared in a pan until crispy and flaky. To complete the dish, you'll make a tomato-based sauce by sautéing onions and cherry tomatoes. Finally, you'll pour the Tuscan sauce over the salmon, garnish with fresh herbs, and serve it hot. This dish is perfect for a quick and easy weeknight dinner, as it requires only a few ingredients and can be prepared in under 30 minutes.
Ingredients
4 fillets salmon
2 tbsp tomato paste
1/2 brown onion
2-3 garlic cloves
1 cup broth or vegetable stock
2 tbsp Mingle Tuscan Chicken Seasoning
1 cup spinach
1/3 cup coconut cream
4 slices lemon
6-8 cherry tomatoes
1/4 cup sun-dried tomatoes
salt, to taste
Directions
- Prepare salmon by salting. In the meantime, finely chop onion and garlic. Add this to a pan on medium heat with extra virgin olive oil.
- Once translucent and tomato paste, salt, sun-dried tomatoes and cherry tomatoes. Cook until blistered.
- Add in stock water or broth and place salmon into pan. Add spinach, tuscan seasoning and coconut cream and allow to simmer until the salmon is cooked through.
- Once cooked, serve alone or on a bed of basmati rice.

- You can find Mingle Tuscan Chicken seasoning in most Woolworths stores.
