These Chocolate Protein Crunch Bars are the perfect balance of rich dark chocolate and a satisfying crispy texture, thanks to soy protein crisps. They’re vegan, seed oil-free, and naturally sweetened, making them a delicious and nutritious snack for any time of day!

Ingredients

  • 1 cup Soy Protein Crisps

  • 1 cup Melted Vegan Dark Chocolate

  • 1 tbsp Coconut Oil

  • 1 tbsp Maple Syrup

  • 1/2 tsp Vanilla Extract

  • Pinch of Sea Salt

  • Coconut Flakes (optional)

Directions

  • Line a small square or rectangular dish with parchment paper to prevent sticking.
  • In a heatproof bowl, combine the dark chocolate and coconut oil. Melt using a microwave in 20-second intervals, stirring in between, until smooth. Alternatively, use a double boiler on the stovetop.
  • Stir in the maple syrup and vanilla extract to enhance the flavour.
  • Pour the melted chocolate mixture over the soy protein crisps in a mixing bowl. Gently fold everything together until the crisps are fully coated.
  • Pour the mixture into the prepared dish and spread it out evenly, pressing it down gently with the back of a spoon or spatula to compact it slightly. Add a pinch of sea salt and optional toasted coconut flakes on top.
  • Place the dish in the fridge for at least 30 minutes, or until the chocolate has fully hardened.
  • Once set, lift the block out of the dish using the parchment paper and cut it into bars or squares using a sharp knife.
