1kg whole Red Snapper
3cm ginger, julliened
1 lemongrass, bruised
1 tbsp coconut sugar
1 spring onion, sliced
handful of coriander
1.5 tbsp soy sauce
5 garlic cloves, crushed
1 tbsp extra virgin olive oil

Directions
Start by preparing your oven to 200 degrees celsius. Next, cut fish open and make incisions on the sides of the snapper.
Next prepare your ingredients. Generously salt and oil the fish. Stuff fish with the ingredients, and with the remaining place on top.
Place into the oven and bake for 25-30 minutes depending on your oven. Ensure that you check at around the 20 minute mark with a tooth pick or knife.
Once cooked, serve with limes and a bed of jasmine rice.
