    Ingredients

    • 1kg whole Red Snapper

    • 3cm ginger, julliened

    • 1 lemongrass, bruised

    • 1 tbsp coconut sugar

    • 1 spring onion, sliced

    • handful of coriander

    • 1.5 tbsp soy sauce

    • 5 garlic cloves, crushed

    • 1 tbsp extra virgin olive oil

    • celtic salt

    Directions

    • Start by preparing your oven to 200 degrees celsius. Next, cut fish open and make incisions on the sides of the snapper.

    • Next prepare your ingredients. Generously salt and oil the fish. Stuff fish with the ingredients, and with the remaining place on top.

    • Place into the oven and bake for 25-30 minutes depending on your oven. Ensure that you check at around the 20 minute mark with a tooth pick or knife.

    • Once cooked,  serve with limes and a bed of jasmine rice.
