  • 2 Large Continental Cucumbers

  • 1/2 Red Onion, sliced

  • 1 cup Unsweetened Coconut Yoghurt

  • 1/2 tsp Wholegrain Mustard

  • 1 tbsp Lemon Juice

  • 2 Cloves of Garlic, minced

  • 1 tsp Celtic Sea Salt

  • 1/4 cup Chopped Mint and Dill

  • Crack of Pepper

Directions

  • Slice the cucumbers thinly (using a mandolin if you have one for even slices). Place the cucumber slices in a large mixing bowl.
